Coffee ice cream lives or dies on water discipline. Brewed coffee is nearly all water, and loose water is what turns a CREAMi base into ice shards — so this pint takes its flavor from instant espresso powder, which dissolves straight into the milk and brings pure roast with zero dilution. Two tablespoons is the sweet spot: bold enough to taste like a frozen cappuccino, mild enough to stay scoopable. If you only keep brewed coffee in the house, it can step in for part of the milk, and the FAQ covers the exact swap that keeps the pint creamy instead of icy.

Per-line macros are for the whole amount listed. Nutrition per pint is estimated — see the methodology on the About page.

Steps

  1. Whisk the milk, espresso powder, and sugar for about 60 seconds, until both fully dissolve and the milk turns a uniform cappuccino color. Espresso powder dissolves cleanest in milk at room temperature — no heat needed.

  2. Whisk in the heavy cream, vanilla, and salt until smooth, then pour into the CREAMi pint, stopping at the max-fill line.

  3. Freeze upright on a level shelf for a full 24 hours.

  4. Spin: ICE CREAM

Process on ICE CREAM. The first pass will look crumbly and dry — espresso powder drinks a little moisture, so expect it.

  5. Spin: RE-SPIN

Add 1 tbsp whole milk and RE-SPIN until the pint turns glossy and holds soft-serve ridges. Serve immediately, or level the top before refreezing.

If it comes out crumbly: respin

If the first spin looks dry or powdery, add 1 tbsp whole milk and RE-SPIN. Espresso powder drinks a little of the base's moisture, so coffee pints run slightly drier than vanilla — one extra pass is completely normal.

Still icy after the respin? The icy-fix guide has all seven fixes.

Scaling to your machine

For the 24 oz Deluxe tub (NC501), multiply every ingredient by 1.5 and spin on the Deluxe ICE CREAM setting. On Scoop & Swirl (NC701), the same base works — spin on ICE CREAM, then use SWIRL to fold in chopped chocolate-covered espresso beans.

FAQ

Can I use brewed coffee instead of espresso powder?

Yes, with guardrails: swap 1/4 cup of the milk for 1/4 cup of strong brewed coffee, and keep 1 tbsp of the espresso powder in. Brewed coffee is mostly water, and a full swap adds enough loose water to spin the pint icy — the powder keeps the flavor bold at a safe water level.

How much caffeine ends up in the pint?

Freezing doesn't touch caffeine, so 2 tbsp of instant espresso powder lands the whole pint around 100–120 mg — roughly a double shot spread across every scoop. Decaf espresso powder behaves identically in the spin; nothing else about the recipe changes.

Can I use regular instant coffee?

Works fine — instant coffee is milder than espresso powder, so bump it to 3 tbsp for the same depth. Skip ground coffee itself: it never dissolves, and the grit survives every pass of the blade.

Why did my coffee pint come out icy when my vanilla was fine?

Two usual suspects: brewed coffee added too much water (stick to the 1/4 cup milk swap), or the powder never fully dissolved and left dry pockets in the base. Whisk until the milk is completely uniform in color, and if the pint still spins crumbly, the icy-fix guide's splash-of-milk respin is the recovery move.
