Every pint collection needs a vanilla that actually tastes like ice cream, not frozen sweet milk. This one balances whole milk and cream so it spins smooth instead of powdery, and the extra tablespoon of sugar buys you scoopability straight from the freezer. It's also the base to learn from: once you can spin a creamy vanilla, every flavor variant in this catalog is a one-ingredient swap away. Freeze it flat, spin on ICE CREAM, and respin once if the first pass looks crumbly.

Steps
Whisk the whole milk, heavy cream, sugar, vanilla, and salt in a medium bowl or blender until the sugar fully dissolves — about 60 seconds by hand. Undissolved sugar is the #1 cause of a gritty first spin.
Pour the mixture into the CREAMi pint, filling no higher than the max-fill line. The base expands slightly as it freezes.
Freeze upright and level for 24 hours. A level freezer shelf matters — a tilted pint freezes unevenly and spins worse.
- Spin: ICE CREAM
Process on ICE CREAM. The first pass will look crumbly and dry — that's expected.
- Spin: RE-SPIN
Check the texture: if it's crumbly, add 1 tbsp whole milk over the top and RE-SPIN. Stop when it holds soft-serve ridges. Scoop and serve immediately for the creamiest texture.
If it comes out crumbly: respin
If the first spin looks crumbly or powdery, add 1 tbsp whole milk and RE-SPIN. One extra spin is normal in the CREAMi — it means the base was fully frozen, not that anything went wrong.

Scaling to your machine
For the 24 oz Deluxe tub (NC501), multiply every ingredient by 1.5 and spin on the Deluxe ICE CREAM setting. For Scoop & Swirl (NC701), the same base works — spin on ICE CREAM, then use SWIRL to fold in any mix-ins.
FAQ
Why is my Ninja CREAMi vanilla icy instead of creamy?
Icy texture almost always means too much water and not enough fat or sugar in the base. Use whole milk (not skim), keep the cream, and make sure the sugar fully dissolves before freezing. One respin with a splash of milk fixes most icy pints.
Can I use low-fat milk in this recipe?
You can, but expect an icier pint — fat is what keeps CREAMi bases smooth. If you must use 2%, add 1 extra tbsp of sugar to help lower the freezing point, and plan on one extra RE-SPIN.
How long does the pint need to freeze before spinning?
A full 24 hours on a level freezer shelf. Spinning a pint that's only partially frozen is the most common reason the first processing pass comes out soupy instead of creamy.
