per pint, estimated

This is the pint that converts protein skeptics, and it earns its place honestly. Ultra-filtered milk is the whole trick: it carries roughly double the protein of regular milk with less sugar, so the pint gets to taste like cookies and cream instead of like a protein goal. Thirty-five grams per pint, and it still spins thick and scoopable. The cookies do double duty too — two go into the base before freezing so the blade chops them into that speckled cookies-and-cream crumb, and the last one is saved to press over the finished scoop. Think of it as the dessert version of a post-workout shake, minus the penance.

Steps

  1. Blend the ultra-filtered milk, whey, cream, sugar, xanthan, and salt for 30 seconds until smooth. Ultra-filtered milk tastes slightly sweeter than regular milk, so taste before adding more sugar.

  2. Crumble 2 of the cookies roughly into the base and stir — the blade will finish breaking them during the spin. Keep the third cookie aside for the finish.

  3. Pour into the CREAMi pint up to the max-fill line and freeze upright and level for 24 hours.

  4. Spin: LITE ICE CREAM

Process on LITE ICE CREAM — this low-sugar, high-protein base needs the longer, slower spin that setting gives.

  5. Spin: RE-SPIN

Add 1 tbsp of ultra-filtered milk and RE-SPIN until the pint turns glossy and the cookie crumbs streak through it.

  6. Crush the reserved cookie and press the shards over the top, or fold them through for bigger hits of crunch. Serve immediately.

If it comes out crumbly: respin

If the first spin looks dry, add 1 tbsp of ultra-filtered milk and RE-SPIN. Protein bases almost always need one; stop when the pint turns glossy and the cookie crumbs streak like marbling.

Still icy after the respin? The icy-fix guide has all seven fixes.

Scaling to your machine

For the 24 oz Deluxe tub (NC501), multiply everything by 1.5 — cookies included, so 4 to 5 — and use the Deluxe LITE ICE CREAM setting. On Scoop & Swirl (NC701), spin LITE ICE CREAM, then use SWIRL to ripple the reserved cookie crumbs through the finished pint.

FAQ

Can I use regular milk instead of ultra-filtered?

You can, but the pint drops about 7g of protein and picks up a little more lactose ice. If you can find ultra-filtered milk — Fairlife is the most common brand — it's worth it here; no other single ingredient works as hard in this recipe.

Do I need special protein cookies?

No — regular chocolate sandwich cookies actually work better. They crush cleanly and don't turn to paste, while many 'protein' cookies contain gums that gunk up the spin. If you need the pint gluten-free, swap in gluten-free sandwich cookies and it qualifies.

How accurate is the 35g protein count?

It's the rounded sum of the pint: 13g from a cup of ultra-filtered milk, 20g from a scoop of whey, and about 2g from the cookies. Your exact number depends on your protein powder's label, so treat it as a close estimate and check the scoop if you track to the gram.

My pint came out icy — what went wrong?

Almost always the freeze. A pint that isn't fully solid — it needs the full 24 hours, level, on a shelf rather than the door — spins slushy and refreezes icy. Under-blending is the second culprit: the whey has to dissolve completely or you get grainy ice pockets. One LITE ICE CREAM pass plus a RE-SPIN with a splash of milk recovers most icy pints.
