Mint chocolate chip should taste like cold air and cocoa, not toothpaste — and the difference is one line on a bottle. Peppermint extract is clean, cool, and candy-bright; bottles labeled plain 'mint' lean on spearmint, which freezes into toothpaste territory. Measure it carefully either way, because peppermint doubles its shout in the freezer. The chips go in after the final spin, on MIX-IN, so they stay actual chips — frozen into the base, they'd shatter into dusty specks on the first pass. Green is optional costume; the pint tastes identical in white.

Steps

  1. Whisk the milk, sugar, peppermint extract, salt, and food coloring (if using) until the sugar fully dissolves — about 60 seconds by hand. Measure the peppermint exactly: it intensifies as it freezes, and too much reads as menthol.

  2. Whisk in the heavy cream until smooth, then pour into the CREAMi pint, stopping at the max-fill line. Keep the chips out of the pint entirely — they wait for the very end.

  3. Freeze upright on a level shelf for a full 24 hours. An off-kilter pint freezes unevenly, and uneven pints spin icy in patches no respin can save.

  4. Spin: ICE CREAM

Process on ICE CREAM. The first pass will look crumbly and dry — that's expected on a fully frozen base.

  5. Spin: RE-SPIN

Check the texture: if it's crumbly, add 1 tbsp whole milk and RE-SPIN until the pint turns glossy and holds soft-serve ridges.

  6. Spin: MIX-IN

Dig a hole down the center with a spoon, pour in the mini chips, and run MIX-IN once. Serve immediately — the chips snap hardest when the pint is fresh.

If it comes out crumbly: respin

If the first spin looks crumbly or powdery, add 1 tbsp whole milk over the top and RE-SPIN. Mint bases behave like vanilla — one extra pass is completely normal, and the chips never go in until the base is glossy.

Still icy after the respin? The icy-fix guide has all seven fixes.

Scaling to your machine

For the 24 oz Deluxe tub (NC501), multiply every ingredient by 1.5 and spin on the Deluxe ICE CREAM setting, folding the chips in on MIX-IN. On Scoop & Swirl (NC701), spin on ICE CREAM, then use SWIRL to ripple the chocolate chips through the finished pint.

FAQ

Peppermint extract or mint extract — does it really matter?

It's the whole recipe. Peppermint is the clean, cooling flavor in classic mint chip; bottles labeled plain 'mint extract' lean on spearmint, which reads as toothpaste in ice cream. Check the bottle before you buy, and if your extract is double-strength, start with 1/2 tsp and build from there.

Why did my chips turn into powdery crumbs?

They went in too early. Chips frozen into the base get shattered into dust by the very first ICE CREAM spin. Fold them in on the MIX-IN program only after the base has been spun glossy — that blunt, slow churn is the one built for keeping chunks intact.

Should mint chip ice cream be green?

Only because we grew up with it that way — peppermint adds zero color, so a white pint is just as authentic. Two drops of green food coloring whisked into the base gets you the parlor look without changing a single thing about the flavor.

Can I use fresh mint instead of extract?

You can: warm the milk, steep a packed 1/2 cup of fresh mint leaves for an hour, strain, chill completely, and proceed. It tastes more garden than candy, and the leaves add a little loose water, so plan on one extra RE-SPIN — the respin guide walks through the texture.
