Frozen berries are the CREAMi's best friend — they arrive already frozen, so the fruit solids do the textural work that syrup would in a shop sorbet. This one is five ingredients, fully vegan, and done in the time it takes a blender to count to forty-five. The lemon is not optional: it makes the berries taste like berries instead of sweet ice. Three tablespoons of sugar keeps it bright rather than dessert-sweet, which is exactly why it lives in the healthy column. Spin on SORBET, respin once with a splash of water, and eat it the day you spin it — sorbet is at its silky best within a few hours.

Steps
Blend the frozen berries, sugar, water, lemon juice, and salt until completely smooth — about 45 seconds. Scrape down once halfway so no berry chunks survive.
Pour the purée into the CREAMi pint, stopping at the max-fill line. For a seedless sorbet, push the purée through a fine-mesh sieve before pouring.
Freeze upright on a level shelf for a full 24 hours.
- Spin: SORBET
Process on SORBET. The first pass will look crumbly and slightly icy — fruit bases always do.
- Spin: RE-SPIN
Add 1 tbsp cold water over the surface and RE-SPIN. Repeat once if needed, then scoop and serve immediately.
If it comes out crumbly: respin
If the first spin looks icy or crumbly, add 1 tbsp cold water and RE-SPIN. Fruit bases are the most freeze-sensitive in the CREAMi — one extra pass with a splash of water takes them from slushy crumbs to silky.
Still icy after the respin? The icy-fix guide has all seven fixes.
Scaling to your machine
For the 24 oz Deluxe tub (NC501), multiply every ingredient by 1.5 and spin on the Deluxe SORBET setting. On Scoop & Swirl (NC701), the same base works — spin on SORBET, then use SWIRL to fold in extra whole frozen berries.
FAQ
Can I use fresh berries instead of frozen?
Frozen are better here — they're picked at peak ripeness and their structure blends into a smoother base. If you only have fresh, freeze them solid on a sheet pan for 3–4 hours first so the pint sets properly.
Why did my berry sorbet come out icy?
Fruit bases are mostly water, so they're the most iciness-prone recipes in the CREAMi. Make sure the sugar fully dissolves in the blend, keep the full 24-hour freeze, and use the RE-SPIN with a splash of cold water — that's usually the whole fix.
Do I have to strain out the seeds?
No — the CREAMi blades break most seeds down during the spin. If you want a seedless scoop, blend first, then push the base through a fine-mesh sieve before freezing; it costs 5 minutes and nothing else changes.
