This pint earns its color the slow way. Fresh strawberries get tossed with a spoonful of sugar and left to macerate for half an hour, which pulls out their juice and concentrates the flavor into something syrup only pretends to be — that bowl of berry liquid goes into the base, and the softened berries go in with it. The result is a pink strawberry ice cream that tastes like June, with none of the flat, cooked-candy note you get from syrup or jam. Vanilla and a pinch of salt keep the fruit forward. This is the strawberry pint for people who read the label and want to recognize all of it.

Steps
Hull the strawberries, slice them into quarters, and toss with 1 tbsp of the sugar in a bowl. Let them macerate for 30 minutes until juicy — the bowl should hold a few spoonfuls of red liquid when they're ready.
Blend the macerated strawberries with all their juice, the remaining 1 tbsp sugar, the whole milk, heavy cream, vanilla, and salt until completely smooth — about 45 seconds. Tiny flecks of berry seed are fine and traditional.
Pour into the CREAMi pint, stopping at the max-fill line, and freeze upright on a level shelf for a full 24 hours.
- Spin: ICE CREAM
Process on ICE CREAM. The first pass will look crumbly and pale — that's expected on a fruit base.
- Spin: RE-SPIN
Add 1 tbsp whole milk and RE-SPIN until the pint holds soft-serve ridges and turns a uniform pink. Serve immediately.
If it comes out crumbly: respin
If the first spin looks crumbly, add 1 tbsp whole milk and RE-SPIN. Fruit bases carry more water, so one extra pass is normal — if it still looks icy rather than crumbly, respin once more rather than adding liquid.
Still icy after the respin? The icy-fix guide has all seven fixes.
Scaling to your machine
For the 24 oz Deluxe tub (NC501), multiply every ingredient by 1.5 and spin on the Deluxe ICE CREAM setting. On Scoop & Swirl (NC701), the same base works — spin on ICE CREAM, then use SWIRL to fold in extra chopped fresh strawberries.
FAQ
Can I use frozen strawberries instead of fresh?
Yes, and in winter they're the better call — frozen berries are picked ripe and they arrive already cold. Skip the maceration, add them straight to the blender, and increase the sugar by 1 tbsp to 3 tbsp total, since frozen berries run more tart.
Why macerate the strawberries first?
Maceration draws the juice out of the fruit using nothing but sugar and time — that juice carries most of the flavor and color into the base. Skip it and you're freezing mostly intact berries, which shred into icy flecks instead of blending into a smooth, pink pint.
Can I leave strawberry chunks in the ice cream?
Chop 2 tbsp of the macerated berries and reserve them before blending, then fold them in after the final spin with a MIX-IN spin — or SWIRL on the NC701. Freezing them inside the base makes them freeze into ice pebbles; folding keeps them soft.
Why is my strawberry pint icy when my vanilla isn't?
Strawberries are mostly water, so they dilute the fat and sugar that keep a base smooth. Keep the full cream, don't stretch the fruit past 1 1/2 cups, and respin with the splash of milk. If it's still icy, the fix is at the source — macerate the full 30 minutes and blend until no flecks remain, because intact fruit is what freezes into crystals.
