A real strawberry milkshake should taste like the bottom of the berry bowl, and that means making your own syrup — which is just sugar, sliced strawberries, and thirty minutes of patience. That macerated fruit goes into the milk base with a spoonful of cream for slow-pouring body, and after a full day in the freezer the CREAMi spins it back into the thickest strawberry shake a straw will survive. It's 345 calories for the entire pint, berries included, with nothing artificial coloring it pink. The MILKSHAKE setting does the texture work; the half-hour of maceration does the flavor work.

Steps

  1. Hull and slice the strawberries, toss with 1 tbsp of the sugar, and let them macerate for 30 minutes until they've released a few spoonfuls of red juice. That juice is the whole flavor base — don't drain it.

  2. Blend the macerated strawberries with their juice, the remaining 1 tbsp sugar, the whole milk, cream, vanilla, and salt until completely smooth — about 45 seconds.

  3. Pour into the CREAMi pint, stopping at the max-fill line, and freeze upright on a level shelf for a full 24 hours. The CREAMi spins frozen bases, so there's no shortcut around this step.

  4. Spin: MILKSHAKE

Process on MILKSHAKE (NC300 and NC301). The texture should look like soft-serve that barely holds a spoon — thick, but it settles flat when you stop.

  5. Spin: RE-SPIN

If it's too thick to pour through a straw, add 2 tbsp milk and RE-SPIN. If it's soupy, refreeze 2 hours and spin again.

If it comes out crumbly: respin

If the shake spins up crumbly instead of pourable, add 2 tbsp milk and RE-SPIN — milkshakes should end looser than ice cream. If it runs soupy, the base under-froze; refreeze the pint for 2 hours and spin again.

Still icy after the respin? The icy-fix guide has all seven fixes.

Scaling to your machine

For the 24 oz Deluxe tub (NC501), multiply every ingredient by 1.5 and spin on the Deluxe MILKSHAKE program. On Scoop & Swirl (NC701), spin on ICE CREAM and use SWIRL to fold in extra chopped strawberries.

FAQ

What Ninja CREAMi setting makes a milkshake?

On the NC300 and NC301, use the dedicated MILKSHAKE setting after the full 24-hour freeze. The CREAMi Deluxe (NC501) has its own MILKSHAKE program too — scale the base ×1.5 for the 24 oz tub and spin. The CREAMi cannot blend a liquid, so the base must be frozen solid first; there is no shortcut.

Can I use strawberry syrup or jam instead of macerating fruit?

You can, but you'll taste the swap — syrup and jam are cooked, and they read as candy-sweet rather than fresh. Use 2 tbsp syrup or jam in place of the macerated berries and cut the added sugar to 1 tbsp; expect the color to come from the bottle instead of the fruit.

Can I skip the 30-minute maceration?

Only by swapping in frozen strawberries: blend them with the full 2 tbsp sugar and an extra 2 tbsp milk, no waiting required. Fresh berries without maceration freeze into icy flecks that never fully incorporate — the waiting is what makes the shake smooth.

Why did my milkshake come out icy instead of creamy?

Too much loose water in the base — usually under-macerated fruit or a short freeze. Make sure the berries sit the full 30 minutes, freeze the pint a full 24, and respin with milk rather than adding more before freezing. The icy-fix guide walks through every cause.
