Sugar-free ice cream fails for one reason: the sweetener. Erythritol and most sugar alcohols freeze far harder than sugar, so a pint built on them comes out of the CREAMi as a brick, and no amount of respinning rescues it. Allulose is the exception, because it depresses the freezing point the way sugar does without the glycemic load — it is the only substitution that gives you a scoopable pint rather than a science project. This vanilla base is deliberately simple: heavy cream and whole milk for body, allulose for sweetness and freeze chemistry, and a real vanilla bean paste for flavor. Nine grams of protein, roughly two grams of sugar, and a texture that holds up.

Per-line macros are for the whole amount listed. Nutrition per pint is estimated — see the methodology on the About page.

Steps

  1. Whisk the allulose into the whole milk first and stir for a full 60 seconds, until it is completely dissolved and no grit remains on the bottom of the bowl. Allulose is only about 70% as sweet as sugar, so if your palate wants more, dissolve more of it rather than adding sugar back.

  2. Whisk in the heavy cream, vanilla bean paste, and salt until the base is uniform.

  3. Pour into the CREAMi pint up to the max-fill line, level the surface, and freeze upright on a level shelf for 24 hours.

  4. Spin: ICE CREAM

Process on ICE CREAM. Sugar-free bases freeze firm, so expect a dry or crumbly first pass — that is normal and is exactly what the respin is for.

  5. Spin: RE-SPIN

Scrape the walls down, add 1 tbsp of whole milk if the texture looks dry, and RE-SPIN until the pint turns glossy and holds soft-serve ridges. Serve immediately.

If it comes out crumbly: respin

If the first pass is crumbly, scrape the walls down and add 1 tbsp of whole milk before you RE-SPIN. Sugar-free bases freeze harder than sugared ones and one respin with a splash of milk is usually all it takes; add 1 tbsp of heavy cream instead if you want it richer.

Scaling to your machine

For the 24 oz Deluxe tub (NC501), multiply every ingredient by 1.5 and use the Deluxe ICE CREAM setting. For Scoop & Swirl (NC701), the same base spins on ICE CREAM and SWIRL folds in nuts or sugar-free chocolate chips if you want crunch.

FAQ

Why allulose instead of erythritol or stevia?

Allulose lowers the freezing point of the base, which is what keeps the pint scoopable; erythritol freezes harder than sugar and produces a brick. Stevia and monk fruit sweeten without adding bulk, so they do nothing for texture — use allulose for the function and a little stevia for extra sweetness if you want it.

How sweet does this actually taste?

Mild, by design. Allulose is roughly 70% as sweet as sugar, so this base tastes like a lightly sweetened vanilla rather than a dessert-sweet one. Raise the allulose to 1/2 cup if you want it sweeter without adding sugar.

Does this work on the LITE ICE CREAM setting?

It does, and some owners prefer it for sugar-free bases — the program's gentler cycle can help a very firm base shave more evenly. If the first pass is dry on ICE CREAM, try LITE ICE CREAM next time, with the same respin.

Can I use this as a base for other flavors?

Yes, and it is the right base for them. Swirl in sugar-free chocolate syrup, blend in a spoon of cocoa powder, or fold berries in on MIX-IN. Keep the allulose-to-liquid ratio intact and the texture will follow.
